Healthy Veggie Burrito and a Case of Claustrophobic Feet


Yesterday at lunch one of my co-workers was steadily munching on a very tempting-looking burrito. I actually craved her burrito the rest of the afternoon and when I got home and Roger asked if we had anything to make in the house, (Of course we did not.) I replied no, but I have a great idea for what we can make! Her burrito was a healthy veggie burrito filled with rice, tomatoes, and avocados. And although I didn't have a recipe and I was too hungry to look one up on the web, we traversed to the grocery store and decided to come-up with our own recipe for a Healthy Veggie Burrito. (See below.)

Even though the below was basically just a winged recipe, it came out wonderfully and we will definitely be making it again. Sometimes burritos can be overly heavy and thus I don't eat them often, but the recipe below creates a wonderfully light and refreshing burrito. A perfect meal in the spring or summer when it's so warm outside that you don't feel like eating much. I'll have to remember to re-create this recipe while I'm on vacation the week after next.

Speaking of vacation. I don't know about the rest of you but being from Indiana, I am so looking forward to some warm weather. Maybe I'm just imagining it, but it seems like we've had a colder and drearier than usual winter in the north. By April, we usually have a handful of fluke 70 degree days - not this year. I think the highest we've gotten is 60 degrees thus far and those 60 degree days have either been dreary or rainy so it doesn't really feel that warm. I haven't checked the weather for my trip yet, but anything warmer than 70 to me will feel awesome! Speaking of warm weather. Not sure if any of you ever get claustrophobic feet, but I sure do! Yesterday, I had the worst case of claustrophobic feet ever. I was sitting at work and for the first time ever at work, I actually had to take off my shoes. Now, they were leather dress boots, but they don't fit tightly so I'm not sure what my issue was, but I actually could not take leaving my boots on for a second more w/out screaming! The more I thought about it, the more I realized that my little footsies were probably craving the sandals and flip flops I had been trying on the night before. Sandals give toesies such breathing (and wiggly) room. Can't wait to officially wear them again! :-)

Healthy Vegetarian Burritos From: Shana's Recipe Box
Very fresh and health vegetarian burrito!

Recipe Details
Makes:
4-6 overly stuffed burritos
Ingredients
Rice, 2 cups, White or Brown
Burrito Shells
Black Beans, 1 Can
Tomatoes, 2
Red Onion, 1 small
Avocados, 2 ripe
Lime juice, several teaspoons
Sour Cream, several tablespoons
green chilies, small can
pepper to taste

Directions
Prepare rice as directed.
Dice tomatoes, red onion, and avocados.
Mix veggies together (smash avocados until creamy) and add several heaping tablespoons of sour cream, several teaspoons of green chilies, and several teaspoons of lime juice. Mix until creamy. Add pepper to taste.
Warm black beans in microwave.
Warm burritos in microwave for 15-20 seconds until flexible.
Lay burritos on plate and fill with rice, then beans, then sour cream and veggie mixture. Fold into burrito form. Enjoy!

Now that sounds yummy, I love avocados. Also, my feet too need to be free. My toes need to breathe and be painted and be pretty again.

That sounds deee-lish!! My mom and dad are coming for a visit soon and this would be wonderful to serve on the patio for lunch. And take heart dear girl for your vacation...our temps are a warm and balmy 80 degress here in Florida and it's early enough in the season that the humidity is not awful.
